Prep & bake setup
- Preheat the oven to 325°F and line an 8x8-inch pan with parchment paper.
- Mix the graham cracker crumbs with melted butter and press firmly into the bottom of the pan.
Make the cheesecake filling
- Beat the cream cheese and granulated sugar until smooth, then beat in the eggs one at a time and the vanilla extract.
Cook blueberry sauce
- In a small saucepan, simmer the blueberries, granulated sugar, and lemon juice for 5 minutes until the berries break down.
- Stir in the cornstarch slurry and cook for 1 minute, until thickened, then let cool slightly.
Assemble & swirl
- Pour the cheesecake batter over the crust and smooth the top.
- Drop spoonfuls of blueberry sauce on top and swirl gently with a knife.
Bake & chill
- Bake for 30–35 minutes at 325°F, until the center is just set.
- Cool completely at room temperature, then chill for at least 3 hours before slicing.
Notes
For the cleanest slices, cool until no longer warm, then chill at least 3 hours (overnight is even better). Store covered in the refrigerator up to 4 days; freeze up to 1 month—thaw overnight in the fridge. For a lower-sugar option, use a 1:1 sugar substitute for the cheesecake and sauce while keeping the cooking times the same.
