Blend the smoothie
- Add the frozen peaches, frozen banana, Greek yogurt, milk, vanilla extract, and honey to a high-powered blender. Blend on high for 30–45 seconds, stopping to scrape down the sides as needed, until the mixture is very thick like soft-serve.
- If the blender stalls, add additional milk 1 tablespoon at a time while blending. Continue until smooth and thick, then stop and scrape the sides once more.
Serve immediately
- Pour the smoothie into a wide, shallow bowl immediately, working quickly since it melts fast. Smooth the surface with the back of a spoon.
- Arrange toppings in sections across the top: granola along one side, peach slices in the center, and coconut flakes and chia seeds scattered over everything. Finish with a drizzle of honey.
- For an extra-firm texture, pop the bowl in the freezer for 2 minutes before topping. Then add the toppings and serve right away.
Notes
For best texture, work fast after blending—the base melts quickly in a bowl. If you want it firmer, freeze for 2 minutes before adding toppings (then serve immediately); store leftovers in the freezer up to 1 day for slushy texture, or in the fridge up to 24 hours (it will soften). No-cook and easy to adjust: use dairy-free yogurt and almond milk for a dairy-free option.
