Method

Prep and bake
  1. Preheat the oven to 375°F and grease a 9x13 baking dish.
  2. Brown the kielbasa rounds in a skillet, then set aside.
  3. Whisk the sour cream, cream of chicken soup, chicken broth, garlic powder, and onion powder until smooth.
  4. Layer half the potatoes in the baking dish, then top with half the onion, half the garlic, and half the kielbasa.
  5. Pour in the sauce and sprinkle with 3/4 cup of the cheddar over the first layer.
  6. Repeat the layers with the remaining potatoes, onion, garlic, and kielbasa.
  7. Top with the remaining cheddar.
  8. Cover with foil and bake at 375°F for 40 minutes, until the potatoes start to soften.

Notes

For even tender potatoes, keep the slices thin and fairly uniform, and make sure the sauce reaches into the layers. Refrigerate leftovers in a covered container for up to 3 days. Freezing: yes, freeze portions up to 2 months and reheat covered in the oven at 350°F until hot. If you want a lighter option, use reduced-fat sour cream and reduced-fat cheddar; the casserole will still slice cleanly but may brown slightly less.
