Ingredients
  

  • 4 cup watermelon cubed
  • 1.5 cup blueberries
  • 8 oz feta cheese crumbled
  • 0.25 cup fresh mint leaves torn
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 0.25 tsp flaky sea salt

Method
 

Assemble the fruit
  1. Arrange the watermelon cubes and blueberries on a large serving platter.
  2. Scatter the crumbled feta evenly over the fruit.
Make and dress
  1. Whisk together the olive oil, lime juice, and honey in a small bowl until smooth and glossy.
  2. Drizzle the dressing evenly over the salad so the fruit is lightly coated.
  3. Top with fresh mint and flaky sea salt, distributing them across the surface.
  4. Serve immediately for the best texture and flavor.

Notes

For the juiciest bite, cube watermelon just before serving and keep feta refrigerated until the last minute. Store leftovers in an airtight container in the fridge up to 1 day (watermelon will release more juice). Freezing isn’t recommended for best texture. For a dairy-light swap, use a feta-style vegan crumble instead of traditional feta.
